How to make Vegan Quiche?

This vegetarian breakfast recipe is perfect for making ahead and serving brunch. Here’s my version of the vegan quiche recipe to start with.

Ingredients
  • 16 oz Just Egg
  • 1 vegan pastry pie shell I used Marie Callender’s Pastry Pie Shells 
  • 1.5 cups mushrooms sliced
  • 1 cup onion chopped
  • 1/2 cup cherry tomatoes sliced
  • 1 cup vegan cheese
  • A handful of baby spinach
  • 1 tbsp olive oil
Instructions
  1. Bake pastry pie shells according to the package
  2. Preheat oven to 375F
  3. Heat oil in a pan. Add onions and sauté 2-3 min
  4. Add in mushrooms and sauté until tender
  5. Add Spinach, cherry tomatoes, mushrooms, and onions into the pie crust
  6. Top mixture with vegan cheese
  7. Pour the Just Egg evenly over the mixture
  8. Bake for 40-45 minutes, or until the middle of the quiche is set
  9. Remove from oven and allow quiche to cool for 15 minutes before serving

What to serve with Vegan Quiche?

Green Salad – A green salad is one of the best things to serve with vegan quiche. A simple green salad with a vegan dressing complements the quiche’s texture and taste, especially when accompanied by some yummy crusty bread.

Potato Salad – If you are doing a pot-luck or have a huge crowd to feed, pairing potato salad with this quiche is an excellent idea. Both are light, easy, and not to mention filling.

Asparagus – If you are looking for veggie accompaniment, there is nothing better than asparagus, which is usually available year-round and is super easy to prepare.

Can this vegan quiche be made gluten-free?

If you like this vegan quiche to be gluten-free, you have 2 options:

  1. You can use a store-bought gluten-free pie crust or make your own. For a homemade crust, you can use gluten-free flour, such as sorghum flour, or purchase a pre-made gluten-free pie crust.
  2. Secondly, you have the option of making a crust-less quiche by mixing the ingredients and baking them together.

Can I make it ahead of time?

Yes! It can be fully baked and refrigerated. Just remember to cool off your quiche after baking completely. Keep it covered in plastic wrap in the refrigerator for up to 4 days to prevent it from drying. Then, reheat it for 15-20 minutes in the oven at 350 degrees F before you serve it.

Can you freeze it?

The best way to freeze any quiche is to wrap it up very well in plastic or aluminum foil or place it in an airtight storage container for up to 2 months. You need to thaw a frozen quiche in the refrigerator overnight before the day you plan to eat it. Bake the thawed quiche at 350°F for about 15-20 minutes, or until it’s warmed.
