Roasted Cabbage Steaks

You only need 6 ingredients to make these delicious crispy roasted cabbage steaks at home. They are excellent with a range of sides or on their own as a high-fiber snack. Plus, they are gluten-free, vegan, paleo, dairy-free, and super easy to make! Even a total beginner home cook can recreate these tasty cabbage steaks at home. 

Ingredients

  • Cabbage: Although any cabbage will work well, I recommend using a large, firm green cabbage for this recipe as it is slightly milder in flavor and, therefore, your steaks can work well with most sides and sauces. 
  • Olive oil: Any oil works for this recipe but extra virgin olive oil is great for adding in some additional nutritional benefits, including providing healthy fats such as omegas and vitamins and antioxidants. 
  • Flavoring: This recipe is uncomplicated and uses the simple flavors of fresh garlic, onion powder, salt, and black pepper to enhance the flavor of the crispy cabbage. You could also add a dash of smoked paprika or liquid smoke to add an almost meat-like smokey flavor to these cabbage steaks. 

Top Tips:

  • Use a fresh, tight, and crisp cabbage for best results.
  • Don’t be tempted to use less oil as the fat helps tenderize the cabbage and create a gorgeous caramelized texture during roasting.
  • Cut the steaks to around 1inch thick – any smaller and they may become too crisp and lose their tender center which adds to the texture of this recipe. 
  • If your cabbage steaks taste a little bitter, add a small drizzle of agave nectar or serve the steaks with a sweeter side dish to help balance the bitter cabbage. 

What To Serve With Roasted Cabbage Steaks 

  1. Enjoy these oven-roasted cabbage steaks as they come with my liquid gold tahini sauce for a tasty snack.
  2. You can also serve them as if with crushed walnuts, a squeeze of lemon juice, and a handful of chopped fresh parsley. These additional ingredients add a hit of flavor and some healthy fats to keep you fuller for longer.
  3. Try these veggie steaks with a pasta dish such as my ultra-green broccoli pesto pasta.
  4. Or opt for a potato-based side, such as these roasted potatoes with brussels sprouts or some simple sweet potato fries. 
  5. Roasted veggies are always a good idea so why not roast some mixed Meditteranean veg while the oven is hot.

Storage Recommendations

Cool the steaks and then place them in an airtight container in the fridge for about 3-4 days. They may go a little limp or soggy if you leave them longer than this. 

 

You can freeze cabbage for as long as 3 months, however, as this recipe is super simple and quick to prepare, I recommend making the cabbage steaks on the day you plan to enjoy them.

 

To reheat, simply pop them in the microwave for 2 minutes or reheat in the oven (recommended) at 350°F for about 5 minutes or until they crisp up and are hot.

METHOD

  1. Preheat your oven to 400F
  2. Line a baking sheet with parchment paper
  3. In a small bowl combine the minced garlic with the olive oil
  4. Slice the cabbage into 1″ thick slices.
  5. Coat both sides of the cabbage steaks with the olive oil and garlic mixture and seasonings and place on the lined baking sheet
  6. Place the baking sheet into the oven and cook for 13-15 minutes. Then, flip the steaks and cook for 13-15 minutes more until nicely browned.
  7. Serve on a plate and drizzle with this tahini sauce, optional
