Ingredients

  • 1/4 cup olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1 pound vegan ground beef
  • 1 28-ounce can of crushed tomatoes
  • 1/4 cup Italian parsley, chopped
  • 1/4 cup fresh basil leaves, chopped
  • salt and black pepper
  • 1/4 cup freshly grated vegan parmesan

Method

  1. In a large skillet, heat the olive oil. Next, add the onion and garlic and saute over medium heat until the onions are soft, about 8 minutes. Next, add the celery and carrot and saute for 5 minutes.
  2. Increase heat to medium and add the vegan ground beef. Stir frequently, add the tomatoes, parsley, and basil, and simmer for 30 minutes. Finish bolognese grated vegan parmesan.
  3. Serve over pasta of choice.
