Ingredients
- 1/4 cup olive oil
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- 1 celery stalk, chopped
- 1 carrot, chopped
- 1 pound vegan ground beef
- 1 28-ounce can of crushed tomatoes
- 1/4 cup Italian parsley, chopped
- 1/4 cup fresh basil leaves, chopped
- salt and black pepper
- 1/4 cup freshly grated vegan parmesan
Method
- In a large skillet, heat the olive oil. Next, add the onion and garlic and saute over medium heat until the onions are soft, about 8 minutes. Next, add the celery and carrot and saute for 5 minutes.
- Increase heat to medium and add the vegan ground beef. Stir frequently, add the tomatoes, parsley, and basil, and simmer for 30 minutes. Finish bolognese grated vegan parmesan.
- Serve over pasta of choice.
