Vegan Quiche

Course Breakfast

Ingredients
  

  • 16 oz JustEgg
  • 1 vegan pastry pie shell I used Marie Callender’s Pastry Pie Shells 
  • 1.5 cups mushrooms sliced
  • 1 cup onion chopped
  • 1/2 cup cherry tomatoes sliced
  • 1 cup vegan cheese
  • A handful of baby spinach
  • 1 tbsp olive oil

Instructions
 

  • Bake pastry pie shells according to package
  • Preheat oven to 375F
  • Heat oil in a pan. Add onions and saute 2-3 min
  • Add in mushrooms and saute until tender
  • Add Spinach, cherry tomatoes, mushrooms, onions into pie crust
  • Top mixture with vegan cheese
  • Pour the JustEgg evenly over the mixture
  • Bake for 40-45 minutes, or until the middle of the quiche is set
  • Remove from oven and allow quiche to cool for 15 minutes before serving
