Introducing my delicious jerk mushrooms with mango salsa and coconut rice, aka the perfect summer meal. The mango salsa brings a variety of fresh flavors to your pallet to compliment the spicier mushrooms and creamy coconut rice. Although this recipe has a fairly long list of ingredients, making this dish at home is super easy! 

Top Tips for Making Jerk Mushrooms and a Delicious Mango Salsa:

  • Marinate the mushrooms for 30 minutes to one hour to allow them to soak up the jerk seasoning goodness!
  • Use fresh fruits and veggies. Although you can make this recipe all year, the ingredients will be extra juicy and full of vibrant flavors when they are in season. This recipe is best when the mango is in season between May and September. 
  • Don’t overmix the salsa, especially if you use a particularly soft avocado.  
  • I recommend that you do not skip the olive oil as it enhances the flavor of this tasty salsa. Additionally, extra virgin cold-pressed olive oil can offer incredible health benefits from the antioxidants and healthy fats. 
  • Although the creamy coconut rice certainly adds a rich, creamy element to this dish, if you experience an afternoon slump in energy with a higher carbohydrate lunch, switch out the coconut rice for cauliflower rice or serve the jerk mushrooms and mango salsa in lettuce cups.

Any mushroom goes! Try this recipe out with a mix of mushrooms, including portobello or button mushrooms which are usually the most affordable and easily accessible mushroom varieties, or play around with some meatier mushrooms such as oyster, lion’s mane, and king trumpet. 

 

Most mushrooms are packed with antioxidants and selenium, which is harder to consume naturally on a vegan diet. 

What is jerk seasoning?

Is salsa supposed to have tomatoes?

Traditional Mexican salsa will be made with tomatoes, onion, peppers, and some flavor enhancers such as salt, pepper, fresh herbs, and citrus juice. However, you can use other ingredients to create a delicious salsa, including other fruits such as mango.

This Caribbean jerk rice recipe with mushrooms and mango avocado salsa is perfect for summer. You can even prepare the mushrooms and salsa in advance, store them in the fridge, and just set your rice cooker on 20 minutes before you plan to eat, and voila, a tasty Jamaican-inspired dish in no time! Then just squeeze on some fresh lime juice and top with cilantro, and you are good to go.

INGREDIENTS

Jerk Mushrooms

  • 6-ounces mushrooms of choice
  • 1/2 tablespoon jerk seasoning
  • 2 tablespoon neutral cooking oil

Coconut Rice

  • 1 cup basmati rice
  • 1/2 can of light coconut milk
  • 1/4 cup coconut water

Mango Avocado Salsa

  • 1 mango, diced
  • 1 avocado, diced
  • 1/4 red onion, diced
  • 1 small red pepper, diced
  • 1 teaspoon olive oil Or juice of a small lime
  • Sea salt and freshly cracked pepper to taste
  • Chopped cilantro + additional for topping, optional

METHOD

Rice Cooker Coconut Rice

  1. First, prepare the coconut rice by adding the basmati rice, light coconut milk, and coconut water to a rice cooker. Cook per the directions on the rice cooker. Once the rice is done, fluff with a fork before serving.

Stove Top Coconut Rice

  1. Add basmati rice, light coconut milk, and coconut water to a pot and stir together. Bring to a boil, then reduce to a simmer, cover, & cook 20-25 mins until liquid is evaporated—fluff with a fork before serving.

Mango Avocado Salad

  1. Add ingredients to a medium mixing bowl and toss together until well combined. Place in fridge until it’s time to use.

Jerk Mushrooms

  1. Rinse and dry mushrooms, then add to a mixing bowl
  2. Add 1 tablespoon oil, jerk seasoning, and toss together until the mushrooms are well coated. Let marinate for 30 minutes
  3. Then heat the neutral cooking oil in a large skillet over medium heat, and add the marinated mushrooms. Cook for about 10minutes mins, occasionally stirring until nicely browned. Then remove from the heat.
  4. Assemble the bowl by adding the coconut rice and topping it with the jerk chicken, mango avocado salsa, and additional chopped cilantro.
