  • A classic tofu recipe with a Moroccan twist. Traditionally you don’t find tofu paired with a Moroccan blend, so this is a little special.

Ingredients and Substitutions

  • Hodo Chermoula Moroccan Tofu Cubes: Pre-seasoned with Moroccan flavors. This delicious organic firm tofu, made with soybean oil and organic soybeans, is the hero of this dish. Tofu is an excellent source of plant-based protein. As an example, 4 ounces of tofu offers about 11g of protein.

  • Raisins: Adds a traditional Moroccan touch of sweetness. You can also use sultanas or diced dates as an alternative.
  • Salted almonds: Gives a lovely bite – you could use other nuts like walnuts, pecans, or hazelnuts in their place.
  • Parsley: This is quite a rich dish; adding some lovely fresh herbs helps balance it.
  • Lemon juice: swap lemon for orange or lime juice if you’d prefer. Citrus brings balance to this flavor structure.

Pro Tips and Tricks

  • Tofu texture: aim for a crispy exterior and tender interior on your high-protein cubes. Your oven will need to be pre-heated and hot to achieve this result. In addition, you want to Hodo Moroccan tofu cubes to be golden brown for optimal results.
  • Space the tofu out: this will prevent it from steaming and turning mushy. Creating space in the baking sheet will allow the sides to crisp and cook evenly. If your pan is too small to space them out, cook them in batches. Make sure to cut them into even, bite-sized pieces.
  • Drain the tofu: ensure all the excess liquid has drained off the tofu.
  • Fluff the couscous: Remember to fluff it after heating it with a fork to avoid lumpy couscous.
  • Taste to balance flavors: This recipe provides all the ingredients you need to balance the flavors – ensure you taste it before serving. You might need to add a little extra salt, black pepper, or a splash of lemon.

Variations and Add-ins

  • Bulk it with veggies: Add a medley of bright, healthy vegetables like zucchini, bell peppers, carrots, or sweet potatoes. Roast them ahead of time, saute or steam them. Saute them with some caraway seeds for a bit of depth.
  • Turn up the heat: red pepper flakes, cayenne pepper, or added chili will spice up any Hodo Moroccan tofu recipes.
  • Load it with fresh herbs: Think beyond parsley to cilantro and mint.
  • Dried fruits: Along with raisins, you can add dried fruits such as apricots, dates, or figs to provide a pleasant sweetness and chewy texture. Dice the dried fruits and mix them with the couscous.
  • Serve it with a sauce: If you love sauce with your dishes –try simmering fresh tomatoes with tomato paste and Moroccan spices over medium-high heat until you have a lovely sauce.
  • Top with zested lemon and orange: For added brightness!
  • Yogurt sauce: Whip plain yogurt, minced garlic (or garlic powder), lemon, and salt. Finish with a drizzle of olive oil.
  • Traditional pesto: for an easy pop of green and herbaceous taste.
  • Swap the couscous for rice: Add the tofu to rice bowls for a gluten-free version. It’ll be lovely with rice noodles, too.

Make Ahead and Storage

Make Ahead

Partial cooking: If you want to save time on the day of serving, you can partially cook the tofu cubes in advance. Pan-fry or bake them until they are browned but not fully crispy.

Allow them to cool, then store them in an airtight container in the refrigerator. When you’re ready to serve, finish cooking them until they reach the desired level of crispiness.

Storage Instructions

Cooked tofu and couscous: Store any leftover cooked tofu and couscous separately in airtight containers in the refrigerator. Store them for up to 3-4 days. Then, reheat the tofu in a skillet or oven until heated through and enjoy the couscous cold or reheat it in the microwave or stovetop.

Raisins, almonds, parsley, and lemon juice: These ingredients should be stored separately. Place the raisins and almonds in sealed containers or bags, and store them in a cool, dry place. Store the chopped parsley in an airtight container lined with a paper towel to maintain freshness. Keep the lemon juice in a sealed container in the refrigerator.
