INGREDIENTS

  • 1 tablespoon olive oil
  • 1/2 yellow onion, chopped
  • 2 garlic cloves, minced
  • 3/4 cup old-fashioned rolled oats
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 2 vegan eggs
  • 2 1/2 cups steamed brown lentils
  • 3/4 cup Greek Style Vegan Yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh mint, finely chopped
  • Mixed greens for serving

METHOD

  1. Preheat the oven to 350F. Line a baking sheet with parchment paper and set it aside.
  2. Heat the olive oil in a large pan over medium heat. Add the onions to the pan and saute for 3 minutes, then add in the minced garlic and saute for 3 minutes more.
  3. To a food processor, add the onion mixture, oats, apple cider vinegar, 3/4 teaspoon salt, pepper, vegan eggs, and steamed lentils and pulse until well combined.
  4. Transfer the mixture to a mixing bowl and shape the mixture into 12 patties, and place on the baking sheet.
  5. Bake for 20 minutes, remove from the oven, flip the patties, and then bake for 15- 20 more minutes.
  6. Prepare the mint yogurt sauce by combining the remaining 1/4 teaspoon salt, vegan greek yogurt, lemon juice, and mint into a bowl and mix.
  7. Serve the patties over fresh greens and top with the yogurt sauce and chopped nuts of choice ( optional )
