INGREDIENTS

  • 13 ounces vegan beef, I used Gardein
  • 1 cup jarred salsa
  • 8 ounces pasta of choice
  • 1 packet of taco seasoning
  • 2 cups vegan cheddar cheese
  • 3 cups water
  • Salt and pepper

Toppings:

  • 1/2 cup Fritos, optional 
  • 1 jalapeno, deseeded and chopped 
  • Cilantro, chopped 

METHOD

  1. Preheat a large deep skillet over medium heat.
  2. Add vegan beef and season with a pinch of salt and pepper.
  3. Stir taco seasoning into ground vegan beef then stir in water, salsa, and pasta noodles.
  4. Bring mixture to a boil.
  5. Stir, cover, and reduce heat to a simmer.
  6. Cook for about 15 minutes until pasta is tender. (Less time if using gluten-free pasta)
  7. Turn off heat and stir in cheese.
  8. Season with additional salt and pepper if needed.
  9. Serve with optional toppings

One-Pot Taco Pasta
