Greek Chik’n Bowl

Ingredients
  

  • 8 oz Daring Lemon & Herb vegan chicken

Vegan Tzatziki

  • 1 cup vegan plain Greek yogurt I used Kite Hill
  • 1 tbsp  lemon juice
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 4 tbsp dill
  • 1/4 cup  olive oil

For Salad

  • 1 cucumber sliced
  • 1 pint cherry tomatoes or sliced tomatoes of your choice
  • 1 tbsp lemon juice
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 garlic clove minced
  • 1 tsp oregano
  • vegan feta cheese for topping,  I used Follow Your Heart

Instructions
 

  • Cook the vegan chicken according to package
  • Prepare the cucumber salad by combining all ingredients into a mixing bowl and toss to combine.
  • Make the tzatziki by whisking all the tzatziki ingredients together until creamy
  • To serve, place the vegan chicken, cucumber salad, tzatziki, over greens, or brown rice in a bowl. Top with feta cheese and extra dill (optional)
