Mediterranean Orzo Salad

Ingredients
  

  • 1 cup orzo pasta
  • 7 oz marinated artichoke hearts halved
  • 1 cup English cucumber diced
  • 1 pint grape tomatoes halved
  • 1/2 cup kalamata olives pitted and halved
  • 1/3 cup vegan feta cheese crumbled
  • 1/3 cup red onion diced
  • 1/2 cup vegan Greek dressing or to taste
  • parsley for garnish

Instructions
 

  • Cook the orzo according to the package and add to a large mixing bowl
  • Next, add the veggies to the mixing bowl and toss until well combined
  • Toss with vegan Greek dressing
  • Top with vegan feta crumbles and serve warm or cold
