Lentil Patties with Mint Yogurt Sauce

Ingredients
  

  • 1 tbsp  olive oil
  • 1/2 yellow onion chopped
  • 2 garlic cloves minced
  • 3/4 cups old-fashioned rolled oats
  • 1 tsp salt divided
  • 1/2 tsp black pepper
  • 2 vegan eggs
  • 1 tbsp apple cider vinegar
  • 2.5 cups steamed brown lentils
  • 3/4 cup Greek Style Vegan Yogurt
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh mint finely chopped
  • Mixed greens for serving

Instructions
 

  • Preheat the oven to 350F. Line a baking sheet with parchment paper and set it aside.
  • Heat the olive oil in a large pan over medium heat. Add the onions to the pan and saute for 3 minutes, then add in the minced garlic and saute for 3 minutes more.
  • To a food processor, add the onion mixture, oats, apple cider vinegar, 3/4 teaspoon salt, pepper, vegan eggs, and steamed lentils and pulse until well combined.
  • Transfer the mixture to a mixing bowl and shape the mixture into 12 patties, and place on the baking sheet.
  • Bake for 20 minutes, remove from the oven, flip the patties, and then bake for 15- 20 more minutes.
  • Prepare the mint yogurt sauce by combining the remaining 1/4 teaspoon salt, vegan greek yogurt, lemon juice, and mint into a bowl and mix.
  • Serve the patties over fresh greens and top with the yogurt sauce and chopped nuts of choice ( optional )
