Ingredients – 2 15 oz cans of butter beans, drained + rinsed – 1/4 c olive oil – 1/2 c fresh mint – 1/2 c fresh cilantro – 1 cloves garlic – Juice & zest of 1 lemon – 1 tbsp white wine vinegar – Salt + black pepper to taste

Method 1. Add the butter beans to a large bowl. 2. Add olive oil, mint, cilantro, garlic, lemon juice and zest, white wine vinegar, salt, + pepper to a food processor or blender. Blend until creamy. 3. Pour the creamy dressing over the butter beans in the bowl + mix until beans are well coated. 4. Serve with greens of choice.
