Raspberry Chocolate Tart – No Bake
Ingredients
No-Bake Crust
- 1½ cups almond flour
- ¼ cup unsweetened cocoa powder
- ¼ cup coconut oil, melted
- 1 tablespoon maple syrup
- Pinch of salt
Raspberry Chocolate Filling
- ½ cup canned full-fat coconut cream
- 6 oz vegan chocolate chips
- ¼ cup raspberry preserves
- 2 cups fresh raspberries
METHOD
- Lightly grease a 9-inch pan with a removable bottom.
- Prepare the crust. In a bowl, combine all of the ingredients for the crust & mix together. Press evenly into the prepared tart pan & set aside.
- Place chocolate chips into a small bowl.
- In a small saucepan, bring coconut milk to a boil, then pour the hot coconut milk over chocolate chips and let stand for 1 minute, then mix until smooth and creamy.
- Mix in raspberry preserves.
- Pour the filling into the prepared crust & garnish the top with raspberries.
- Place tart in the refrigerator to set for about 1-2 hours.
